Simple Vegan Sour Cream (Modern Girl Recipe)
I promise that this tastes like the real deal, but is SOOO much easier on digestion. You're gonna love it ;)
1 cup whole raw cashews, soaked (at least 15 minutes in hot water; 2 hours in cold water)
Juice of 1 medium lemon
2 teaspoons apple cider vinegar
1/2 teaspoon kosher salt or sea salt + more to taste
1/3 cup water
Drain cashews and add all ingredients to a high-speed blender or food processor.
Blend until texture is smooth.
Store in your refrigerator in an air-tight container or mason jar for up to 1 week.
