Simple Vegan Sour Cream (Modern Girl Recipe)

I promise that this tastes like the real deal, but is SOOO much easier on digestion. You're gonna love it ;)  

Ingredients:

  • 1 cup whole raw cashews, soaked (at least 15 minutes in hot water; 2 hours in cold water)

  • Juice of 1 medium lemon

  • 2 teaspoons apple cider vinegar

  • 1/2 teaspoon kosher salt or sea salt + more to taste

  • 1/3 cup water

Directions:

  • Drain cashews and add all ingredients to a high-speed blender or food processor.

  • Blend until texture is smooth.

  • Store in your refrigerator in an air-tight container or mason jar for up to 1 week.
