Simple Summer Gazpacho Recipe
Refreshing, nutrient dense and SO good for digestion.
I suggest making this gazpacho and storing in your refrigerator to have on hand for a snack or on-the-go lunch.
4 Tomato (medium, roughly chopped)
1 Yellow Onion (small, roughly chopped)
2 cups chopped and peeled cucumber
2 cups White Navy Beans (canned or cooked)
1/3 cup chopped fresh parsley
1/3 cup chopped fresh basil
1 Garlic (clove, minced)
3 tbsps Apple Cider Vinegar
1/4 cup Extra Virgin Olive Oil 1 cup Water
Sea Salt & Black Pepper (to taste)
Add all ingredients to a blender and blend until smooth.
Pour into mason jars and top with extra garnishes or protein of choice.
Refrigerate before serving. Enjoy!
